Now this was a family pleasing recipe. Baked potatoes were riced, combined with eggs, flour and milk, then lightened with some whipped egg whites, and finally the pancake batter was fried in butter. I paired ours with vinaigrette dressed greens and roasted chicken for a lovely weekday dinner. I wish I had made more of these little devils!
